Description

Baked Parmesan Hash Brown Cups are a delightful twist on traditional hash browns. With cheesy goodness and a crispy texture, these cups make for an easy and satisfying snack or side.   • 2 cups frozen hash browns (thawed)
  • 1 cup freshly grated parmesan cheese (divided)
  • 2 large eggs
  • 2 green onions (chopped)
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  • Preheat the oven to 400°F (200°C) and prepare a muffin tin with nonstick spray.
  • In a bowl, combine thawed hash browns, half of the Parmesan cheese, eggs, salt, and black pepper until well mixed.
  • Scoop about 2 tablespoons of the mixture into each muffin slot, pressing firmly to shape the cups.
  • Bake for 20-25 minutes or until the cups are golden brown and crispy.
  • Take them out of the oven, sprinkle the remaining Parmesan cheese on top, and return to the oven for an additional 5 minutes until bubbly.
  • Before serving warm, garnish with chopped green onions.

Notes

Ensure hash browns are fully thawed to achieve the best texture before mixing.
You can substitute the green onions with chives for a different flavor profile.
For a spicier kick, add some diced jalapeños to the mixture.
