- 2 cups heavy cream cold
- ¾ cup granulated sugar
- 1 vanilla extract
- 2 tablespoon vanilla instant pudding
- ⅔ cup irish cream
- 1 lbs mascarpone cheese room temp
- 27 ladyfingers
- 1 cup espresso
- 2 tablespoon irish cream
- 2 tablespoon cocoa powder
Instructions
- In a large mixing bowl, combine cold heavy cream, sugar, Baileys Irish cream, vanilla extract, and vanilla instant pudding, then mix with an electric hand mixer until soft peaks form.
- Add the room-temperature mascarpone cheese and mix until smooth and creamy, avoiding overmixing to prevent curdling.
- Prepare a mixture of espresso and Baileys in a shallow bowl. Quickly dip the ladyfingers in the coffee mixture for 1-2 seconds and arrange them evenly in a 13 by 9-inch baking dish.
- Spread half of the mascarpone mixture over the soaked ladyfingers, smoothing it out with a spatula.
- Layer another set of dipped ladyfingers and top with a thin layer of the mascarpone cream.
- Transfer the remaining filling into a piping bag with a round tip and pipe dollops of the cream over the thin mascarpone layer.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours to allow the ladyfingers to soften. Generously sprinkle cocoa powder over the top before serving.
Notes
For best results, use very cold heavy cream to achieve better peaks.
Adjust the amount of cocoa powder according to your taste preference.
This dessert can be made a day in advance for enhanced flavor.
