- 1 ripe avocado
- 1/4 cup white wine vinegar
- 1 lemon – juice only
- 1 garlic clove
- 3/4 cup avocado oil
- 2 tbsp agave nectar
- 2 tbsp cilantro (or basil, or parsley)
- coarse kosher salt to taste
Instructions
- Prepare your blender or food processor, ensuring it has an opening on top for adding ingredients while blending.
- Halve the avocado, remove the pit, peel off the skin, and place the avocado meat into the blender or food processor.
- Add white wine vinegar, lemon juice, agave nectar, garlic, cilantro, and salt into the blender (do not add oil yet).
- Secure the lid and start blending; slowly drizzle in the avocado oil while blending. Continue blending for a few more seconds after all oil is added.
- Check the consistency and taste for salt. If a thinner dressing is desired, add an extra 1/4 cup of avocado oil and blend again.
Notes
For a variation, try adding fresh basil instead of cilantro for a different flavor profile.
Store any leftover dressing in an airtight container in the refrigerator for up to three days.
This dressing can also be used as a dip for vegetables or a spread for sandwiches.
