Description

This Avocado Dressing features an irresistible blend of ripe avocado, zesty lemon, and aromatic garlic. It’s a breeze to whip up and perfect for drizzling over salads or as a dip for your favorite snacks. Enjoy a burst of fresh flavor in every bite!


Ingredients

  • 1 ripe avocado
  • 1/4 cup white wine vinegar
  • 1 lemon – juice only
  • 1 garlic clove
  • 3/4 cup avocado oil
  • 2 tbsp agave nectar
  • 2 tbsp cilantro (or basil, or parsley)
  • coarse kosher salt to taste

Instructions

  1. Prepare your blender or food processor, ensuring it has an opening on top for adding ingredients while blending.
  2. Halve the avocado, remove the pit, peel off the skin, and place the avocado meat into the blender or food processor.
  3. Add white wine vinegar, lemon juice, agave nectar, garlic, cilantro, and salt into the blender (do not add oil yet).
  4. Secure the lid and start blending; slowly drizzle in the avocado oil while blending. Continue blending for a few more seconds after all oil is added.
  5. Check the consistency and taste for salt. If a thinner dressing is desired, add an extra 1/4 cup of avocado oil and blend again.

Notes

For a variation, try adding fresh basil instead of cilantro for a different flavor profile.
Store any leftover dressing in an airtight container in the refrigerator for up to three days.
This dressing can also be used as a dip for vegetables or a spread for sandwiches.
