- ½ cup chopped apple, about 1/2 a large apple
- 1 teaspoon maple syrup
- pinch of cinnamon
- ½ cup old fashioned oats
- ½–¾ cup unsweetened almond milk
- ¼ cup plain greek yogurt or coconut yogurt
- 2 teaspoons maple syrup, honey or your favorite sweetener
- ½ teaspoon vanilla
- ½ teaspoon cinnamon, or apple pie spice
- Toppings: cinnamon apples, nut butter, chopped nuts, chia or hemp seeds
Instructions
- Combine chopped apple, 1 teaspoon maple syrup, and a pinch of cinnamon in a microwave-safe bowl. Heat for 30-60 seconds until softened and let cool. Reserve ¼ cup for topping.
- In a jar or a container, add oats, almond milk, yogurt, 2 teaspoons maple syrup, vanilla, and ½ teaspoon cinnamon. Mix well.
- Stir in ¼ cup of the warmed cinnamon apples into the oat mixture. Secure the lid and shake to combine evenly.
- Place the jar in the refrigerator overnight, or let it sit for 30-60 minutes if preparing in the morning.
- Before serving, remove the lid, and add more yogurt or almond milk if the mixture is too thick. Top with remaining cinnamon apples and optional toppings like nut butter or chopped nuts.
Notes
This dish can be prepared a day in advance for a quick morning meal.
Feel free to customize toppings based on your preferences, such as adding chia seeds or your favorite nut butter.
The oats can be adjusted to your desired thickness by varying the amount of almond milk.
