Description

Apple Cinnamon Blondies are a delightful treat full of fresh apples and warm spices. Easy to make and perfect for sharing at gatherings or as a cozy dessert at home.


Ingredients

  • 1 cup peeled cored, and chopped apples (½” pieces)
  • ⅛ teaspoon ground cinnamon
  • 1 tablespoon dark brown sugar
  • 1¼ cups all-purpose flour
  • ¾ teaspoons baking powder
  • ¼ teaspoon kosher salt
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • ½ cup unsalted butter melted
  • ¾ cups dark brown sugar packed
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • ¼ teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • 2 tablespoons milk

Instructions

  1. Cook the chopped apples, ground cinnamon, and dark brown sugar in a frying pan over medium heat for about 5 minutes until softened. Transfer the apples to cool.
  2. Preheat the oven to 350°F, and prepare an 8×8” pan by greasing and lining it with parchment paper for easy removal later.
  3. In a large bowl, mix flour, baking powder, kosher salt, ground cinnamon, and ground nutmeg together.
  4. In a separate bowl, whisk together melted butter, brown sugar, egg, and vanilla extract until smooth.
  5. Combine the wet ingredients with the dry ingredients, folding together until almost fully mixed, then add in the cooled apples and their juices, mixing gently until incorporated.
  6. Spread the batter evenly in the prepared pan and bake for 18-22 minutes, until lightly browned on top. Take care not to overbake!
  7. Allow to cool completely on a wire rack before icing.

Notes

Ensure the apples are chopped into small, uniform pieces for even cooking.
Store leftovers in an airtight container for up to 3 days for best freshness.
Experiment with adding nuts or raisins for extra flavor and texture.
