Description

This Apple Blueberry Pie features a perfectly flaky lattice crust and a delightful filling of fresh apples and blueberries, making it an ideal choice for dessert lovers seeking an easy and flavorful homemade treat.

Ingredients

Scale
  • 2 Pie crusts homemade or store-bought for a double-crust pie
  • 2 medium Granny Smith apples peeled, cored, and thinly sliced
  • 2 medium Honeycrisp apples peeled, cored, and thinly sliced
  • 2 cups fresh blueberries or frozen, unthawed
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter cut into small cubes
  • 1 egg beaten with 1 tablespoon water (for egg wash)
  • Coarse sugar for sprinkling optional

Instructions

  1. Preheat the oven to 400°F (200°C) and place a baking sheet on the lowest rack.
  2. Roll out one pie crust and fit it into a 9-inch pie dish, leaving about 1 inch overhang. Trim excess, fold edges under, and crimp decoratively.
  3. In a large bowl, mix the sliced apples, blueberries, granulated sugar, brown sugar, cornstarch, lemon juice, lemon zest, cinnamon, nutmeg, and salt until evenly coated.
  4. Pour the fruit mixture into the prepared crust, mounding slightly in the center, and dot with cubes of butter.
  5. Roll out the second crust, place it over the filling, trim excess, crimp edges to seal, and cut slits for steam to escape. For a lattice top, cut into strips and weave over the filling.
  6. Brush the top with egg wash and sprinkle with coarse sugar, if desired.
  7. Bake at 400°F for 20 minutes, then reduce the temperature to 375°F (190°C) and bake for an additional 30-40 minutes until golden brown and bubbling. Cover edges with foil if browning too quickly.
  8. Allow the pie to cool on a wire rack for at least 2 hours before slicing.

Notes

Use homemade pie crust for a truly special touch.
Ensure the fruit filling is well mixed for consistent flavor throughout the pie.
Let the pie cool completely before cutting to avoid a runny filling.
