Why You’ll Love This Recipe

  • Simple & Quick: Whip this cake together in just about 50 minutes!
  • Irresistible Flavor: A delightful blend of sweet yellow cake, rich chocolate, and fluffy buttercream frosting.
  • Eye-Catching Appeal: The graduation cap made from fondant sits atop, impressing any guest.
  • Flexible Serving: Perfect for large gatherings, serving around 30 people.
  • Make Ahead Options: Bake the cakes a day in advance to save time.

Ingredients You’ll Need

  • 2 Yellow sheet cakes: The base of your cake, providing a light, fluffy texture. You can substitute with vanilla cake for a gentle flavor profile.
  • 2 Chocolate sheet cakes: Adding depth and a contrasting flavor, this cake complements the yellow nicely. A devil’s food cake can also work.
  • 1 Cotton candy cake: For a fun twist! This adds a surprising sweetness and is easily replaceable with another flavor of your choice.
  • 10 cups American buttercream frosting (tinted yellow with gel food coloring): Smooth and creamy, this frosting is essential for layering and decorating. Feel free to adjust the color to match the school’s theme.
  • 4 cups marshmallow fondant (2 cups of black and 2 cups of white): To shape the iconic cap and diploma; if fondant isn’t available, consider using modeling chocolate instead.
  • 1 batch rice krispie treats (can also use store-bought): These add a sturdy yet sweet element to the fondant cap. Homemade or store-bought both work perfectly.

How to Make Elegant Graduation Cake with Fondant Cap Topper

  1. Bake the Cakes: Preheat your oven to 350°F (175°C). Prepare two yellow and two chocolate sheet cakes by greasing and lining the pans with parchment paper. Divide your batter evenly into the prepared pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean. Let them cool completely before removing them from the molds.

  2. Prepare the Buttercream: In a large mixing bowl, beat 10 cups of softened butter until creamy. Gradually sift in confectioner’s sugar and incorporate it until fluffy. Add a pinch of salt and yellow gel food coloring until you reach your desired shade. This buttercream should be spreadable but still hold its shape beautifully.

  3. Construct the Cake Layers: Once your cakes have cooled, level them if necessary, making them flat. Start with a yellow cake layer; spread a generous layer of buttercream on top. Layer on a chocolate cake and repeat the process until all layers are stacked. The top should be flat, ready for decoration.

  4. Coat and Refrigerate: After stacking, cover the entire cake with a thin layer of buttercream to trap the crumbs—a technique called the crumb coat. Chill the cake in the fridge for about 30 minutes to set this layer.

  5. Decorate with Fondant: While the cake chills, work on the fondant. Roll out the black fondant and shape it into a square with a rectangular piece for the cap band. Attach the band with a bit of water. Roll out white fondant to create a diploma shape and secure with a ribbon or a little black fondant for effect.

  6. Finish With Details: After chilling, add a final coat of buttercream to smooth out any imperfections. Safely place your fondant cap on top and position the diploma creatively around the cake. Finally, add any additional decorations like edible glitter or sprinkles to enhance its festive look!

Storing & Reheating

To store your cake, keep it at room temperature for up to two days, loosely covered in plastic wrap. For longer storage, refrigerate in an airtight container for up to five days. If you plan to freeze, wrap it tightly in plastic wrap followed by aluminum foil and store it for up to three months. When ready to enjoy, let it thaw in the refrigerator overnight, then bring it to room temperature before serving. Be mindful that the texture may change slightly; adding a fresh layer of buttercream can enhance its taste and freshness.

Chef’s Helpful Tips

  • Make sure all ingredients are at room temperature for even mixing, particularly the eggs and butter.
  • Take your time with the fondant; it’s important to knead it well to achieve the right texture for shaping.
  • Always have extra buttercream ready for touch-ups and to secure elements like the fondant cap and diploma.
  • If you’re new to using fondant, practice rolling and shaping small amounts before attempting the final decor.
  • Consider decorating with items representing the graduate’s school colors or hobbies for a personal touch!

Graduation day is a big milestone; each slice of this elegant cake with its fondant cap will carry a delicious flavor of celebration. I hope this recipe helps you create lasting memories, just as it did for me. Experiment with different flavors and designs to truly make it your own!

Recipe FAQs

Can I make this cake in advance?

Absolutely! You can bake the cakes and prepare the buttercream a day or two ahead. Just store the baked cakes wrapped in plastic wrap at room temperature. Assemble and decorate just before serving for the best freshness.

How do I color the fondant?

You can tint the fondant using gel food coloring, kneading it in until the color is evenly distributed. For vibrant shades, start with a small amount and gradually add more until you achieve your desired hue.

What if my fondant cracks?

If you notice any cracking, gently knead the fondant until it becomes pliable again. If it’s too dry, a small amount of vegetable shortening can help restore moisture. Ensure proper wrapping and storage when not in use to keep it soft.

Can I use different flavors for the cake?

Certainly! Feel free to experiment with different cake flavors. Vanilla, red velvet, or even marble cakes can make delightful variations that cater to the graduate’s preferences while keeping the celebratory spirit alive!
