- 3 medium russet potatoes peeled and 1/2-inch diced
- 1 pound lean ground beef
- 1 medium white onion diced
- 1 tablespoon vegetable oil
- 2 teaspoons minced garlic
- 1 tablespoon italian seasoning
- ½ teaspoon salt
- ½ teaspoon cracked black pepper
- 2½ cups freshly shredded sharp cheddar cheese
Instructions
- Place the cubed potatoes in a pot of salted water and boil for 5–7 minutes until fork-tender. Drain thoroughly and set aside to steam-dry.
- In a large non-stick skillet over high heat, cook the ground beef until browned and no pink remains. Drain the rendered fat and set the beef aside in a separate bowl.
- In the same empty skillet over medium heat, heat the vegetable oil, then fry the onion, par-boiled potatoes, Italian seasoning, garlic, salt, and pepper. Cook for about 5 minutes until the potatoes are golden-brown and the onions are translucent.
- Return the cooked beef to the skillet and stir to combine. Sprinkle the shredded cheese over the mixture and stir constantly until the cheese is melted and glossy, binding the hash together.
- Remove from heat and serve hot.

Ensure the potatoes are not overcooked to maintain their shape.
For extra flavor, consider adding diced bell peppers or your favorite spices.
