- 1 cup unsalted butter (room temperature)
- 1 ¼ cups granulated sugar
- ¼ cup light brown sugar (firmly packed)
- 1 large egg (room temperature)
- 1 large egg yolk (room temperature)
- 1 ½ teaspoons vanilla extract (use clear vanilla extract for slightly lighter cookies)
- ½ teaspoon almond extract
- ½ cup jimmies sprinkles
- ½ cup granulated sugar (for rolling the cookie dough balls)
Instructions
- Whisk together flour, cornstarch, baking powder, salt, and baking soda in a medium bowl. Set aside.
- In a large bowl, beat butter, granulated sugar, and light brown sugar on medium speed for 3-4 minutes until light and fluffy. Scrape down the bowl as needed.
- Reduce speed to low and mix in the egg, followed by the egg yolk, then add vanilla and almond extracts, mixing until incorporated.
- Add dry ingredients in half-cup increments, mixing until no flour streaks remain. Stir in jimmies sprinkles until fully combined.
- Line a baking sheet with parchment paper. Scoop cookie dough in heaping tablespoons onto the sheet. Chill in the refrigerator for 2 hours or overnight.
Notes
For a lighter cookie, use clear vanilla extract.
Chilling the dough helps prevent spreading during baking.
