French Onion Chicken Lasagna Rollups are a comforting dish filled with creamy ricotta, savory rotisserie chicken, and a perfect blend of cheeses. This mouthwatering recipe embodies irresistible flavor and simple prep, making it ideal for weeknight dinners or gatherings.

  • 1 tablespoon unsalted butter
  • 1 tablespoon extra virgin olive oil
  • 2 large sweet onions, thinly sliced
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ cup (½ stick / 57 g) unsalted butter
  • 3 teaspoons garlic, minced
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • ¼ teaspoon crushed red pepper
  • 2 cups (476 g) heavy cream
  • 1 cup (100 g) parmesan cheese, grated
  • 9 lasagna noodles, cooked al dente according to package instructions
  • 1 ½ cups (369 g) ricotta cheese
  • 2 cups (280 g) rotisserie chicken, chopped
  • 2 cups (226 g) gruyere cheese, shredded, divided
  • ½ cup (50 g) parmesan cheese, grated
  • 1 ½ cups (45 g) spinach, chopped, divided
  • parsley, chopped for garnish

Instructions

  • Preheat oven to 375°F (190°C).
  • Spray a 9×13-inch baking dish with nonstick spray and set aside.
  • In a large skillet, heat 1 tablespoon of unsalted butter and 1 tablespoon of olive oil over medium heat. Add the sweet onions, kosher salt, and black pepper. Cook until the onions are caramelized, about 15-20 minutes.
  • In another saucepan, melt ¼ cup of unsalted butter over medium-low heat. Add garlic and sauté for 1-2 minutes until fragrant. Stir in heavy cream, parmesan cheese, salt, pepper, and crushed red pepper. Bring to a simmer and let cook for 5 minutes until slightly thickened.
  • In a large bowl, mix ricotta cheese, chopped rotisserie chicken, 1 cup of gruyere cheese, ¼ cup grated parmesan cheese, and 1 cup of spinach until well-combined.
  • Spread a layer of the cream sauce on the bottom of the prepared baking dish.
  • Lay out the cooked lasagna noodles on a flat surface. Spread the chicken and cheese mixture evenly over each noodle, then roll them up tightly and place seam-side down in the baking dish.
  • Top with the remaining cream sauce and sprinkle with the remaining gruyere cheese and spinach.
  • Bake in the preheated oven for 45-50 minutes until bubbly and golden brown. Let it cool slightly before serving. Garnish with chopped parsley.

Notes

Feel free to substitute rotisserie chicken with any cooked chicken.
For a vegetarian option, omit the chicken and add more vegetables to the filling.
Make sure to cook the lasagna noodles al dente for best texture.
