Description

These Easy Confetti Cookies are a delightful treat made with simple ingredients like white cake mix and colorful sprinkles. They’re incredibly easy to prepare and perfect for parties or any gathering, offering a burst of flavor and fun in every bite.

Ingredients

Scale
  • 13.25 oz white cake mix box
  • ½ cup unsalted butter (113 g), melted, slightly cooled
  • 2 large eggs
  • 5 tablespoons rainbow confetti sprinkles, plus more for rolling
  • 1 teaspoon pure vanilla extract, optional
  • ¼ teaspoon almond extract, optional

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, mix the dry cake mix, melted butter, eggs, and optional extract until a thick dough forms.
  3. Fold in the rainbow sprinkles gently, ensuring not to over-mix the sticky dough.
  4. Let the dough rest uncovered for about 5 minutes to thicken as the cake mix absorbs moisture.
  5. Use a medium cookie scoop to portion out the dough.
  6. Roll each portion in additional sprinkles, ensuring they adhere to all sides.
  7. Place the coated dough balls on the baking sheet, 3 inches apart, and bake for 10-12 minutes until the edges are set and the center looks slightly underdone.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to firm up.

Notes

For best results, use freshly opened cake mix for optimal texture.
Feel free to customize the sprinkles based on your occasion or seasonal themes.
To enhance flavor, consider adding a pinch of salt.
