- 4 cabbage steaks
- 1/3 cup olive oil
- 1 1/2 tsp. minced garlic
- 1/4 tsp. salt
- 1/2 tsp. pepper
- 1 tsp. smoked paprika
- 1 1/2 cups grated parmigiano reggiano cheese
- 1 tbsp. balsamic vinegar
- 1 tbsp. chopped parsley
Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Wash and slice the cabbage in half vertically, then cut 'steaks' from one half, about 1 inch thick, ensuring they hold together.
- In a bowl, mix olive oil, 1/3 cup grated Parmesan, garlic, salt, pepper, and smoked paprika. Brush this mixture on both sides of the cabbage steaks.
- Place piles of the remaining Parmesan (about 1/3 cup each) on the baking sheet, then set each cabbage steak on its cheese bed.
- Roast for 20-25 minutes until the cheese is browned and crisp.
- Before serving, drizzle with balsamic vinegar and sprinkle fresh parsley on top.
Notes
For extra flavor, let the cabbage marinate in the oil mixture for 30 minutes before roasting.
