Chili Lime Roasted Cauliflower is a delightful dish bursting with flavor. This simple recipe combines fresh cauliflower, chipotle powder, and lime juice for a quick and healthy meal that everyone will love.

- 1 large head cauliflower, cut into florets
- 2 garlic cloves, minced
- 2.5 tbsp extra virgin olive oil
- 1.5 tsp chipotle powder (more or less for spiciness!)
- 3/4 tsp salt
- 1/2 tsp black pepper
- 1 tbsp lime juice (1 medium to large lime)
- 1 tbsp coriander/cilantro leaves, finely chopped (optional, sub parsley or chives)
Instructions
- Preheat the oven to 200°C/390°F.
- In a large bowl, place the cauliflower florets. Drizzle with olive oil and add the minced garlic. Mix by hand to coat the cauliflower in oil.
- Sprinkle chipotle powder, salt, and black pepper over the cauliflower. Toss well to evenly coat.
- Spread the cauliflower on a baking tray. Bake for 25 minutes, tossing once halfway through, until edges are caramelized and the cauliflower is tender.
- Remove the tray from the oven. Gather the cauliflower together and drizzle lime juice over the top.
- Sprinkle with chopped coriander before serving hot.
Notes
Adjust the amount of chipotle powder to suit your spice preference.
For added freshness, use lemon juice instead of lime if preferred.
Serve with your favorite protein or as a standalone side dish.
