- 1 medium head green cabbage (~2 pounds), cored and chopped into 1½-inch pieces
- 2 tablespoons olive oil
- 2 teaspoons smoked paprika
- 1 teaspoon fine sea salt
- 1 teaspoon garlic powder
- 1/2 teaspoon freshly cracked black pepper

Instructions
- Preheat your oven to 425°F (220°C).
- Place the cabbage pieces on a baking sheet.
- Drizzle with olive oil, and sprinkle with salt, pepper, garlic powder, and smoked paprika. Toss until well coated.
- Spread the cabbage in a single layer on the baking sheet.
- Roast for 20–25 minutes, tossing halfway through until the cabbage is tender with caramelized edges.
- For added color and crispiness, broil for 1–2 minutes, keeping a close watch.
- Remove from the oven and top with desired toppings. Adjust seasoning if needed and serve warm.
Notes
For a zesty flavor, drizzle fresh lemon juice before serving.
Grated parmesan adds a delightful savory touch if desired.
