Description

This Beef Chili is a delightful combination of ground pork and beef, aromatic spices, and vibrant veggies, making it a fabulous choice for a quick and satisfying dinner. It’s packed with flavor, very easy to prepare, and perfect for chilly nights or gatherings.

Ingredients

Scale
  • 1 med onion chopped
  • ½ lb ground pork
  • ½ lb extra lean ground beef
  • 227 g can of mushrooms
  • 1 green pepper chopped
  • 3 cloves garlic
  • ½ 35 g pkg clubhouse chili seasoning mix
  • ½ 35 g pkg clubhouse spicy seasoning mix
  • 128 oz can diced tomatoes (796 ml)
  • 1 10 -10 oz can tomato soup
  • 1 teaspoon cumin
  • 1540 ml can dark red kidney beans drained and rinsed
  • 2 tablespoon fresh dill finely chopped
  • 6 cups mashed potatoes optional
  • grated light cheese
  • light sour cream
  • additional fresh dill

Instructions

  • In a medium-high heat skillet, brown the ground pork and beef along with the chopped onion and green pepper.
  • Once the meat, onions, and peppers are browned, mix in the remaining ingredients, reserving the dill, cheese, and mashed potatoes for later.
  • Reduce the heat and let the mixture simmer for 15 minutes to allow the flavors to meld.
  • Stir in the fresh dill and allow it to continue simmering on low heat until the onions and green peppers become tender, which should take about 5-10 more minutes.
  • Serve the chili over a cup of mashed potatoes if desired, which adds a delightful creamy texture.

Notes

Using fresh dill elevates the flavor significantly, making it a must-have in this recipe.
For a quicker meal, leftover or instant mashed potatoes can be used as a base.
This dish is great for meal prep as it reheats well and the flavors deepen over time.
