- 1 med onion chopped
- ½ lb ground pork
- ½ lb extra lean ground beef
- 227 g can of mushrooms
- 1 green pepper chopped
- 3 cloves garlic
- ½ 35 g pkg clubhouse chili seasoning mix
- ½ 35 g pkg clubhouse spicy seasoning mix
- 1 –28 oz can diced tomatoes (796 ml)
- 1 10 -10 oz can tomato soup
- 1 teaspoon cumin
- 1 –540 ml can dark red kidney beans drained and rinsed
- 2 tablespoon fresh dill finely chopped
- 6 cups mashed potatoes optional
- grated light cheese
- light sour cream
- additional fresh dill
Instructions
- In a medium-high heat skillet, brown the ground pork and beef along with the chopped onion and green pepper.
- Once the meat, onions, and peppers are browned, mix in the remaining ingredients, reserving the dill, cheese, and mashed potatoes for later.
- Reduce the heat and let the mixture simmer for 15 minutes to allow the flavors to meld.
- Stir in the fresh dill and allow it to continue simmering on low heat until the onions and green peppers become tender, which should take about 5-10 more minutes.
- Serve the chili over a cup of mashed potatoes if desired, which adds a delightful creamy texture.

Using fresh dill elevates the flavor significantly, making it a must-have in this recipe.
For a quicker meal, leftover or instant mashed potatoes can be used as a base.
