- 1 tablespoon melted butter or olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly-ground black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
Instructions
- If your chicken breasts are pre-brined, skip to step 2. In a large mixing bowl, combine 2 cups of lukewarm water and 1/4 cup kosher salt. Stir until most of the salt is dissolved, then add 2 cups of cold water or ice cubes. Add chicken breasts and brine for 15 minutes, or refrigerate for up to 6 hours. Rinse and dry the chicken afterward.
- Preheat the oven to 450°F.
- Arrange the chicken in a single layer in a baking dish. Brush melted butter or olive oil on both sides. In a separate bowl, mix the salt, pepper, garlic powder, and paprika, then sprinkle on both sides of the chicken.
- Bake for 15-18 minutes or until the internal temperature reaches 165°F. For a golden brown finish, broil on high for the last 3-5 minutes, keeping a close eye to avoid burning.
- After baking, transfer chicken to a plate and cover loosely with foil. Let rest for 5-10 minutes.
